I have done quite a few red wine kits. Most recently Sonoma valley cab from Cellar Craft.

Looking at a white wine kit and the this riesling has caught my eye! Anyone know how it turns out and the ABV and any other quirks or kinks with it?
 
Yep, mine turned out at 11.8% ABV.

Many people recommend only using half the f-pac. I tried that originally, but I ended up adding the rest of it and I think it ended up much better. The wine just tasted off with only half the f-pac The Riesling comes out off-dry. (with the entire f-pac) Not really sweet, but not dry either. I find it a great level of sweetness if you like spicy and sweet wine pairings. I drink wines of this level of sweetness with many Cajun dishes like Gumbo and Jambalaya and it goes great.

For the ABV, I wouldn't try to raise much above what it comes to on its own though. It will start overpowering the wine itself and end up tasting like turpentine.
