I'm six months into my Pinot and can't seem to find a thread that I did on it. Either I didn't do one or it's lost in the ethers somewhere.

I racked it one last time at the 6 month mark and plan to bottle the wine this week. It is already a very mature, well integrated wine. I'm sure it will get better, too, as time goes on.

I did this one pretty much by the book from what I recall. I didn't use the sorbate and did some extended aging in the carboy. Other than that, we went by the numbers. It's bigger and fruitier than what I'm used to with a PN. Wonder if that will fade over time.
 
Needed some flexibility in my carboy usage, so I got a wild hair last night and bottled the PN. 6 months aging should probably be sufficient. I put this one in a burgundy style bottle and put them on the rack. Got 6 375ml's, 26 750's and 1 big 1.5L. Not bad at all.
