Heard this before when using star san...i mix per instructions

But between my auto syphon and hose..wine theif..carboys after sanitizing..750ml bottles..

Wouldnt i and those i give wine to be drinking alot of acid (star san)??

I've been brewing beer for 3 years. Star San has been a part of every one. Making wine for about 2 years, again star San in carboys and bottles. No problem.

Star San is effective if the pH is below 3. Pepsi has a pH of 2.5!

Yeah, I wouldn't stress over it.
