Do whites and reds have different so2 targets given the same ph, reds being lower?
Specifically, .8 molecular and .5 molecular? Thx
 
Yes, there are 2 accepted levels for SO2. 0.8 for Whites and 0.5 for Reds. The tannins in red wine act as a natural antioxidant.
 
Mike is absolutely right. The extra tannins and other polyphenols allow red wines to be protected at lower levels. By the way, 0.5 and 0.8 ppm molecular SO2 targets are the minimums. You can certainly aim for more if you think your wine needs more protection.
