Alright, this is my very first try at wine making. I got a wine making kit, and my wine is now in the 2nd fermenting stage, where I have to wait for the sediment to reach the bottom. I'm really confused and unsure how to tell when the 2nd stage is done. Its been sitting for three weeks now, and after its fermented I have to siphon into another jug and put an airlock on it again until it clears according to the directions. It doesn't say anything about how long till its fermented. Just says when "fermination is complete." This is a 1 gallon batch.
 
I am not a kit expert, and I never even made a kit.
But....

At all wine fermentation stages one can detect that fermentation has stopped:

if there is no gas escaping any more through the airlock (no bubbles anymore)
or
If the SG has dropped under 1000

No bubbles is tricky as bubbles may escape one in 2 to 3 minutes or
even slower (once in an hour even).
So the best way is to measure if the wine is dry by looking at the SG
which should be below 1000.
