I have some cranberry that has some white particles floating on top. Looks like some kind of growth can anybody help me with what this might be. It is coming to the end of the ferment stage.

I have a 1/2 gal test batch of Cranberry claret wine that's currently clearing. During it's fermentation I never saw anything like that, I did used dried cranberries though.

White growth doesn't sound good to me sounds contaminated, a picture and the recipe that you used would be helpful to diagnose it.

Are there any off odors or tastes? Usually when you see white floaties from bacterias you will notice an odor that isn't too pleasant.

Smurfe :)

thunder2000,

As you tell us it is at the end of fermentation, so there is still a layer of CO2 on top
of the carboy I presume ??
Well if this is so and your alcohol level is over 9% I think it will not be vinager.

So maybe some other bacterial infection, or some debri from the pulp wich starts to
flow atop.

Did you use sulphites to protect the wine ???
