Pretty sure this will be a solid recipe. It's an updated/upgraded recipe I did several years ago. Pretty sure I took from here in first place..

6 Gallon Batch

20 lbs Cranberries slice IQF (Ordered from wholesaler, Individually quick Frozen)
2 bottles Ocean Spray Cranberry Juice
2 cans Welch's White Grape Conc
15lbs Sugar (truly will be adjusted as needed)
Water to 6 gallons
6 tsp Nutrient
3 tsp Energizer
1.5 tsp Tannin
Pectic Enzyme
K meta

Since I am getting sliced and frozen cranberries, I will likely thaw and give a light crush. Let sit in the must with pectic enzyme for 24 to 36 hours. Will squeeze and press daily once fermentation has started (using a good starter with champagne yeast likely). Will pull fruit after 4 to 5 days once sg reaches 1.020 to 1.015 and rack into carboy. rack again one month, again 3 months, again 3 more months. Will back flavor and sweeten either with reduced and sweetened cranberry juice or sweetened frozen concentrate.. There are more step left out but not one to try a much (lazy).

Im a sous chef so I have access through my distributor.. I know the brand is Wyman. A Maine (which I live in) company...
