I'm trying a cranberry lime orange experiment.

Racked it off the lees today. Decided to mess with it.

I added pectic enzyme, and the remainder (about a quart?) of the homemade cranberry sauce my mom made for thanksgiving. That's the flavor I wanted from the skeeter pee/wineish stuff I was making anyway. Didn't add the sorbate or kmeta or anything else yet. Figure I let that sit for a week while we're on vacation, then see what its like when I get home.
I know I didn't neutralize the yeast, so it may ferment again. So be it. Experimenting is half the fun, right?

Don't worry, you won't hurt my feelings if you tell me it's going to be a disaster, but just tell me why when you do so I don't make the same mistake again. :0
 
from day one when i make wine i put to gather an experiment, the way i look at it is thousands of years ago someone figured out fruit on the ground gave off a good feeling, so that first wine was a experiment, that first batch of intended wine was a experiment,,, i think what your doing is great,
