So I started another Coastal Red kit and carefully paid attention to what I was doing this time. Last attempt ended up down the drain due to some big-time goofs on my part. Lesson learned there. Based on the sample I used to test the gravity for this new kit (hey, can't let it go to waste LOL), this batch actually has the potential to be very good. The flavor is like Burgundy, which is a favorite of my husband and myself. For the sake of experimentation, I might put a gallon or two aside and bulk age it for 3-6 months with some medium French oak cubes and another gallon with a small bit of backsweetening just for fun.
