We have a wine in the carboy that is 9 months old. Fermintation stopped months ago and when we racked it today it had a carbination taste to it. any ideas why? i know its young.
 
* heat a 100 ml beaker/ jar in the microwave for a minute, stir the hot wine to remove the CO2, cool and then retest it. Do you like the change in flavor?

no, ,,,, then try tricks as adding sugar.
yes, ,,, then degas. CO2 is easier to remove when warm so move to a warm spot and use the wine whip. OR degassing is faster under a vacuum, pump a 15 inch vacuum on it for half an hour OR pull a low grade 5 inch vacuum on it with a vacuum cleaner estimate 24 hours but you could space it out especially if you have a head space eliminator.
