First i need say thank you that shares your experience to me.
Second I have 2 question
1-
My first question is Calculate the amount of yeast for making wine.
So I went to this website https://vinoenology.com/calculators/fermentation/
and so they write “yeast rate addition” in index of “fermentation/Yeast” in bottom page but I cant find this number in our yeast packet and in any website.
is a "Yeast Rate Addition" a YAN(Yeast Rate Nitrogen)?
you know I want to find and formulas for calculate the amount of yeast for making wines.
2-
My second question is about PH.
I read some paper that said:
best PH is 3.1 and some body else said 4.5-5.4 is best for making wine.
so what what is best PH for making wine?
can you help me please?

Here are my calculations of what I use to make wines. My target pH for white wine is 3.2 - 3.3, red wine is 3.4 - 3.6. Other winemakers will vary, depending on their style.

Most yeast manufacturers recommend 1 gram per gallon of must, if the brix are below 24.5. This year I only used .7 grams per gallon in an attempt to slow my fermentations down. Seem to have worked.
