I have a C.C. Showcase Old Vine Zin in primary about 72 degrees. It's day 8 and the SG is .995. Would it be ok to rack now into secondary, or should I wait the full 10 days? Will it affect the taste for not being in contact with the skins for 10 days?
 
It won't hurt it if its been 8 days and its dry. I would do a quick and dirty rack and just transfer all the wine and as much sediment as you can so you don't have much head space and then let it sit on the lees for a few more days (another week). Make sure to squeeze the heck out of the grape pack and get all the goodness you can out of it.
 
My fermenter isn't exactly air tight and common sense is telling me to rack it. I'll squeeze the skins really well. This is my first time making a kit with a grape pack. I tasted it today and I think it's going to be fantastic.
