I'm fairly new at winemaking.I want to bulk age WE lodi old vine zin and have followed all instructions.I have added the required 1/4 teaspoon of K-Meta and the wine has been clearing for 25 days.The next step is to bottle if the wine is clear,however,I do not have anymore bottles at this time.My question is.Can I leave the wine on the lees which are very few,or do I rack over to a clean carboy?How long can I leave the wine in the carboy before I have to add more K-Meta if at all? Are there any step by step instructions out there on how to bulk age?
 
I would recommend racking the wine a final time to get it off the fine lees if you are going to bulk age it in the carboy. To be safe from the potential of oxidation I would suggest adding sulfite at a reduced amount for this racking, an 1/8 tsp should give you about 25 ppm (qa 1/4 tsp gives you about 50 ppm).
