Is there a rule of thumb for how much sulfite is lost per month (or other time interval) when bulk aging in a carboy? It's probably a small amount, but I want to account for it.

Nope, there are so many factors that it is impossible to give a typical. Everything fro PH and TA to the amount of headspace and if you rack your wine during thos time will make dramatic changes. Another thing is that every time you add sulfite it is there will be still some S02 bound so you wont need as much but each time you add it less and lessm will become bound so you actually need more then what it calls for. A Free S02 test lit is really a good thing to have.

Wade,
Which free SO2 kit do you like? And where and $

Accuvin has one. About $55 for 20 tests. 4 high range and 16 low range. Been trying to get input on their tests. I'd like to pick up the Pocket Lab.
