Bottled 3 gal of blackberry and 5 gal of plum yesterday. The plum turned out good, but the blackberry is excellent, probably the best batch we've made so far. Sorry, just had to brag to someone.

My Plum wine I made Semi-Sweet, by itself it's good,
With pepperoni pizza it's great!!!!

Never tried it any other way but dry but the combination is definitely something I'll have to try!

The recipe is the same for just about every wine we make. 10 gallons of fruit is smashed up and thrown into a stainless pot. 48 to 72 hours later we press it. Our recipe calls for 2 lbs of sugar for every gal of wine. (10 lbs for a 5 gal carboy, we like it sweet) The yeast we use varies from fruit to fruit. We make a simple wine. No kits, so s.g. readings, or any other tricks of the trade. We generally pick the fruit ourselves. We enjoy the the process from beginning to end.
