I am looking at making a grape. The neighbors tell me they have concord grapes. I would like it to be a bit more of sweet dessert type wine. Not sure what yeast is the best. I used a champange on my rhubarb because that was what I had. But that is not the best for really sweet

Many people would ferment to dry, add sorbate, and back sweeten.

Getting a yeast to stop at a specific sweetness is very difficult.
