Best elderflower champagne recipe you know of?

Looking for a nice elderflower champagne recipe to kick off the season.
Some details i'm interested in:
- Natural yeast or shop bought? (if so which is best)
- Let it finish fermenting in the bottle or ferment out fully then prime it?
- Include the elderflower stalks or nah?

I've never made the champagne, but I can offer that when I make Elderflower wine, I don't include any stalks. I would think they might add some bitterness or extra tannin. It is such a light floral fragrance.

the stalks have a higher content of strychnine, as few stalks so as many berries an/or flowers as possible, now i make a fair amount from the berries but never from the flowers, now from the fruit to get it smoth and good you need to bottle and put back 10 years,,,
