I am learning from Tom, Came home with 60lbs of free bananas today.
Thought I had all the ingredients for wade's banana wine. Found I didn't have Ascorbic Acid. What is it's function in this wine? Can I do without or add later?

PS- the learning from Tom part was finding free fruit, not caught without ingredients.
 
It aids in the prevention of oxidation - usually fruits that oxidize easy call for it, bananas, apples, peaches, etc.
 
You want it from the start as bananas go brown quick. Vitamin C tablets are usually made with ascorbic acid but you get all the pill filler in your wine.
