Not sure if I missed it or not. I have started searching and will continue to look but thought I would ask. I am looking for an apple recipe.
Apple season is almost upon us. I work in the controller atmosphere industry primarily with apple storage. So very soon I will have access to a LOT of apples. Either whole or already in cider form. Can I just skip the processing of apples and pick up 6 gallons of fresh cider? Does anyone have a recipe for cider wine?
 
You can bypass the apples if you want.

The recipe is pretty simple, for most wines. They follow some basic guidelines.

Sugar to SG of 1.085 ish
Acidity to a TA of .55-.65
Maybe add some bananas or golden raisins for body
Cote de Blanc, 1122, or a similiar yeast

Pectic enzyme first, wait 12 hours, add K-meta, wait 12 hours.

Ferment to 1.010-1.020 in primary - or dry - and rack to secondary. Stabilize (kmeta + sorbate), backsweeten with an apple concentrate or F-Pack.

Clear & bulk age atleast 6 months (if my memory serves me right, i think some here recommend 9-12 months for apple to come into its prime)
