almond extract

I just got back from visiting several wineries in Texas and got a sampling of a wine called Sparkling Almond. It was extraordinary. Has anyone dabbled with adding Almond Extract to a Chardonnay or a Blanco?

Had the same wine 2 weeks ago at Messina Hof Winery in the Bluebonnet Trail! Wife loved it and we bought 2 bottles. I’m thinking about splitting my White in Secondary Ferm now and adding almond extract and wine conditioner to back sweeten half. If anyone has any thoughts/experience please share.
