Opened a bottle of this last night after 9 months. Still some alcohol on the nose, but tasted rather tart, not what I really expect in a shiraz. Nice aroma and mouthfeel, otherwise. Does anyone else have experience with this wine? Did you experience the same tartnes, and does it smooth out after more aging?

Here are the details:

MM All Juice Master's Edition Australian Shiraz with raisins and oak chips
Made according to instructions.
Bulk aged: May, 2011 for 2 months
Bottled: July, 2011
 
It probably won't start to get good till it's 18-24 months old give it some time!!!

The tartness is normal for a high end red kit wine when it is young. I like to think the degree of tartness indicates the potential of the wine. I did a MM Masters Valle de Sol which came around at 2 years and is quite good now. It was very tart until the 2 year point. I have a CC Showcase Washington Merlot which still tastes young (and not good enough to drink yet) at 28 months.
My suggestion is to take a case of your Shiraz and hide it somewhere for a couple of years!

I have made this kit and 9 months is way too early for this to taste fantastic.

Open this up around Christmas time and you will be pleasantly surprised.
