My blackberry wine has been sorbated and K meta'd two weeks ago and not backsweetened. Very tart and SG is below .099. There were no bubbles in the carboy even when I shook it a bit during secondary and these appeared during bottling. Is it ok to cork now? This ferment is one of my best and I don't want to mess up at this point. Thank you for any advice.

They've cleared now. Maybe in an hour they will be all clear.

Personally I would not bottle a while until it's totally clear (2-8 months normally). Are you aging it in wine bottles with airlocks? You seem to have a lot of sediment and that can ruin your wine if left in there too long. Normally with fruit wines I rack after fermentation finishes and again in about 2-3 weeks when the majority of sediment is settled. Then I start bulk aging. For a blackberry wine that would be at least 8-9 months,. THEN at that point I would add the K-Sorbate and back-sweeten. No need to add the K-Sorbate until you are about ready to back-sweeten.

Those pictures make it look more cloudy than what it looks like in a glass. It actually stopped dropping sediment a few days ago. Here's another picture that shows clearer. Yes I put airlocks on all the bottles and will wait a bit. Doubt that I can stand to wait 9 months before drinking...maybe one of the bottles will make it. Thanks to all.

start making either or both skeeter pee/DDDB, then you'll have quick drinkers, blackberry goes to a level you'll not believe, if allowed to bulk age at least to what @Scooter68 said, i like mine to bulk age a year or two,,, quick drinkers help you to wait, i made 12 cases of skeeter pee port this year, just to keep my bulk agings safe from midnight raids, lol,,

Dragons Blood Skeeter Pee. Just researched it and it sounds like a fantastic ferment project for me. I don't like sweet drinks but like the idea of experimenting with flavors without the extended patience factor. In time I think I'll be able to get on board with aging for months after I've cellared up a good supply. All the gems of knowledge on this board are most welcome.

you can make them as dry as you like,,, you only half to please yourself or your better half,,,
