I just bottled my first batch of WE Selection Chianti. I added the 1.5 grams (¼ teaspoon) of potassium metabisulphite per the instructions if I were to age the wine for over 6 mths. Is there an expiration on aging your wine too long (Red or White)? Also, do you recommend a minumum wait time before I crack open my first bottle?

Side note, has anyone ever made the Chianti or NZ Limited Edition Gewurtz? How are they?
 
once your chianti is bottled you can drink it anywhere from 4 months onward.. leave some for the year mark and perhaps a bit over.. If it's your first kit though.. it may not last that long!

I wish someone could teach me enough patience to leave a bottle to age for a year.

I think the only other way is to get so much going you get ahead of yourself.
