I've got 6 wines in aging right now and may not have a ton of time to spend in the cellar over the next few months. Rather than rack and rush through them, I was thinking I'd just dose them on their schedule (every 3 months) and leave until later in the spring when I'll have more time to work on them.
They're all racked off of an gross lees. Fine lees, and in some cases oak cubes, only. Is there any downside to just dosing them with kmeta and leaving them be?
