I'm thinking a $175 kit is pretty damn good on its own and might not want to mess with it. Then again, I've never ventured further than 80 or 90 bucks for a kit. so....I don't know...
 
I would not play with this kit, these are fabulous all by themselves!

While coming of age in the 70's, I remember Lambrusco being the "it" wine of the times. I couldn't resist picking up the "Wine of the Month" MM Vinifera Noble Lambrusco kit. I do remember the wine being fizzy but not really a sparkling wine. Question: Do I just NOT degass to keep the co2?....or just degass a little? and if so, will a regular cork hold everything in?
 
It should not be fizzy. By not degassing you run a chance of having your corks POP.
I would degass the wine and enjoy the wine.
