I am making an apple spice wine - currently it is in the carboy for secondary fermentation. When the secondary fermentation is done - should i siphon it off and then add my clearing agent or add the clearing agent first - then siphon off a week later?

There is a good chance that i will be backsweeting this as well - so it may be better to siphon off - backsweeten, add sorbate, and clearing agent - siphon off a week later.

Thoughts?
 
Personally, I would rack once all fermentation is finished. Then add K-meta, K-sorbate, add sweetening, and then clear. Rack off clearings before bottling.
