Hey

I have been bumbling along for a couple of years. Mostly getting it. I have poured out a couple of gallons along the way.

Tonight I opened the remaining bottle of a sweet pink i made with welches white grape juice and some red grapes.

The mason jars of tasty sweet wine were fun.

This one bottle got capped and stored for about a year and a half.

It popped like a champagne bottle.

It foamed like a champagne bottle.

I wish I knew what I did.

It was a real treat. A nice accompaniment to a supper made on the grill.

A happy accident.
 
It must not have fermented dry before bottling. With beer this sometimes happens because an infection can ferment what a brewers yeast can't.
 
Yes, continued fermentation, enjoy it bubbly, but watch out for 'bottle bombs'!
 
I look at de-gassing as a must. It will happen as you age the wine over months. As aging adds to the wine character, I don't feel the need to use vacuum pumps, or other methods to degass, time does the trick!
