Hello wine friends,
This was my first kit I made 40 days ago. its currently in a carboy bulk aging. I tasted it two weeks ago and it was acidic and thin. I tried it two days ago and the acidity went down notably but it still seems too thin. I really don't want to waste the time bottling it, and was thinking about leaving it the carboy for 6 months. I don't expect big things from it. I just wanted to start my first kit. I have a Cellar Craft Amerone. fermenting now.

Is there anything I can do to improve the body and take the acidity out.

I added 1/4 tsp of tannin for every gallon. I also added two oak staves. i'll leave them in there for 6 weeks, rack the wine and then bottle.
 
Sounds good, I tgink youll find it will improve substantially with that and time, what tannins did you add?
 
Gosh Wade I dont know the name but it was for red wine.
Do they make differnt tannins for different wines?
 
there are many different kinds of atnnins, did you check out the link I gave you in an above post?
