Hi, I bought 6 Gallons of fresh juice and used a 7 gallon bucket to use as a primary fermenter, then racked it to a 6 gallon glass carboy. I dont have another 6 gallon carboy to rach into. Can I use the 7 gallon plastic bucket or is that to much exposure to air?

Yes, that's the way to do it if when you have only one. Be quick and efficient, make sure you are sanitary and are properly sulfited, it'll be just fine.

Just to add, only use the bucket for temporary storage until you have cleaned the carboy and then rack back into it.

The wine will be fine.
