Completed another fantastic season with press day on Sunday we had 10 days on the skins.
We did a split batch with D254 and D80 yeasts
The Zin Blend when completely dry .99 on end of day 8 254 was a bit faster
The Super Tuscan 254 went dry .99 on day 10 the D80 lagged with 1 brix left we still pressed it and will let it finish up without the skins
2742 lbs of grapes yielded 217 Gallons of wine (117 on Zin and 100 Super Tuscan
They both taste good right off the press.
The Lancman press was a pleasure to use with had a total of 5 presses.

Love the stainless steel tanks! Need to make that investment myself... Are they easy to work with for racking purposes in particular?
 
Completed MLF for this seasons vintages Super Tuscan and Zin, this is the 2nd year with co-inoculation, it's just about 4 weeks from press day, I will let it go another 2 week before racking and adding SO2. Also made a cheap barrel washer for our 55 gallon and 30 gallon Oak barrels, got it connected to 180 degree hot water line. The taste & color of this years vintages has exceeded all prior vintages up to this point, still have a long way to go, but this is a fantastic start.MLF2020.jpgBarrel Washer.jpg

Very exciting! What is the taste like out of the fermenter? I’m trying to learn how tannins and bitterness develop, curious what you taste right out of fermentation.
