Where to we supply grapes from?
California - Livermore Valley

Our partner vineyards are located in Livermore, California in the Livermore Valley. The historic Livermore Valley is one of California’s most prestigious wine grape growing regions. The combination of elevation, temperatures, soil drainage is extremely ideal for vineyards to flourish and produce high-quality grapes.

These particular vineyards are located outside within 5 miles of Ruby Hill and across from water preserves experiences a slightly cooler effect at night which promotes a later harvest and longer hang time on the vine. This, in turn, allows for increased absorption of nutrients and the flavors, in turn, are phenomenal. The climate of this growing region has been compared to Calistoga and St. Helena in the Northern Napa Valley.

Our 2020 buckets have arrived. Blue 55-gallon drums for bulk buys are also available.

As many of you know, we sold out on our 2019 must buckets back in May! That is much faster than we expected. Shipments will start in October 2020.

For 2020 we have a new crusher/destemmer in place to remove more MOG material so you are left with as many grapes and must without leaves, stems, sticks, etc. New buckets, heavier duty buckets that you can reuse in the future.

FAQ's

What does each bucket contain?

Each bucket contains grape must and may contain up to 4% MOG material. MOG is a material other than grapes such as stems, sticks, leaves. MOG is NORMAL and should be removed prior to fermentation.

How fast do pails ship?

We typically ship within 1-2 business days, however, if you are located on the East Coast and place an order on Wednesday-Friday we may not ship until the following Monday. This is because we don’t want the pails to sit in a shipping warehouse of unknown temperature over the weekend. The shipping carriers usually give an estimate and we don’t want it to take more than 5 days transit time to reach you. West Coast orders will also typically ship out within 1 business day.

How much wine does each frozen pail make?

Each 6-gallon container has 50 pounds of must and makes approximately 3.75 – 4 gallons of wine.

Has anyone used their grapes? What brix can I expect? What about the quality of the wine that these frozen grapes make?

We supply grapes to many of the other top sources for frozen grapes and high end wineries that regularly earn gold and silver medals. We have a customer satisfaction guarantee. We want your business long term and will work hard to retain it.

You can expect the brix at 24 (+/- 1) the listings will be updated after harvest.
 
Realizing it’s different to different zips, but how bad is shipping for single pails?

Shipping in the west coast is included in the $99 bucket price. We have a flat fee of $25 for the east coast.

Thats a really good shipping price, I’ve paid double that in the past. Is the white wine shipped as must, or pressed and settled juice? What are the numbers (BRIX, pH, TA, YAN) on the Sonoma SB ? Any other whites from Sonoma?

Thank you, we will have the Sonoma lab results in a few days, Brix was tested on-site yesterday at ~24. It is being delivered this morning for processing and frozen as crushed/destemmed must. We will also be listing Pinot Grigio from Sonoma as well later today.

I'm just curious how those varietals will do as crushed/destemmed/frozen must and not settled juice. Any need for concern that the juice will pick up too much tannin / color from the skins, making more of an "orange" wine? Just haven't seen it done this way prior............

Its really just preference, we are going to carry two versions of our chardonnay (juice and must). The reason we are able to keep the prices down for Sonoma is that we purchase in larger lots where ~50-75% goes to breweries and our winery customers. This small-batch Sonoma Sauvignon Blanc and Pinot Grigio, we are processing the must with skins and seeds still in the must.

Harvest, processing, and freezing all occur within ~12 hours. Essentially locking the product in place until ready to thaw and process. Once you receive the must, you can thaw it and press out the juice minimizing the contact with skins/seeds, etc.
