Just an update. All the 2017 Primitivo is gone. So it was good enough! We drank it up and it's done. It was pretty good in the end. not long lasting. It did not have the flavor and tannin for long life in the rotation. I did enjoy it.

But, I'm tasting the 2017 Cabernet tonight. It's gotten pretty good, but it remains simple and not really what I wanted. I have 2 cases left which I will drink over the next year. Interesting though, because it changes every time I open one up. So, it's good but not great. More work to do, and not worth saving into the future.

So we are having Cioppino tonight made with the 2017 CS as a base. (We relegated it to cooking wine status). I'm trying some right now, and it continues to improve. With just a hint of oak, this could have been a very good wine:(. And it's OK now, but live and learn. Good even. But it confirms the fact that it's a simple one dimensional wine. I have one more case that's we'll use up this year. It's taken 3 years to get where it is now, but it isn't a 10 year wine.

But, My wife's Cioppino is awesome. It's a west coast thing, but imagine a base of fish stock, tomato, chorizo, with multiple sea food additions. It makes an incredible meal and highly recommended. I'll post pics of the base, and raw ingredients and maybe the final product. Bon appetit.
