Not sure where to go next

So I finally got around to adding sorbate and k-meta. Do I need to sweeten immediately after adding or do I wait. Is time on my side during the wine making process? Does it hurt to sit in secondary fermentation for a few extra weeks without adding kmeta and sorbate?

    New winemaker in minneapolis

Hi Neighbor! We're lucky here in Minneapolis to have a few great home brew shops. I know both Northern Brewer and Midwest Brewing Supplies have some great 6 gallon kits that have everything you need to start. The only thing they don't come with is a cleaning agent like one step or BBrite...

Not sure where to go next

I've got a welch's raspberry concentrate that I just racked for the second time. The SG is at .995. The beginning SG was 1.085. I tasted and I got a good raspberry flavor but it was very dry. I'm going to want to sweeten this up a tad I think, so I have a few quesitons. At this point...

Apple Cider or Apple Juice -- What's the diff?

So with cider wine would it make sense to add sugar up to PA of 11 - 12 % ?

Apple Cider or Apple Juice -- What's the diff?

Doh! But which makes better wine?! I guess I'll just have to make both! AND hard cider! I'm gonna need more carboys!

Apple Cider or Apple Juice -- What's the diff?

Fall is coming here in Minnesota so that means the apple orchards will be making cider in full force. I've seen a lot of posts about making apple wine and it sounds pretty good. My question is: What's the difference between apple wine and apple cider wine? Does it matter if the cider is...

    Dirty Primary

smurfe- I'm pretty certain I recreated your science experiment. I've been using the primary to clean my other equipment and always spray some sanitizer in when I'm done, but I had the cap snapped on when I put it away and I know it wasn't dry. It had a pretty good wine must smell to it, so...

    Dirty Primary

I just opened my 7 gallon primary after its been sitting around for a while preparing to start a new kit. I guess I must not have cleaned it very well the last time i used it because I found some goodies growing inside. I cleaned it out with B-Brite and brushed out the insides and top with...

    Water in airlock turned brown!

I degassed tonight. I used a drill mounted whip the first time but my drill was running low on juice... so maybe I didn't hit it hard enough. It foamed up pretty good the first time i degassed, but this time around it seemed like i got quite a bit more foam coming up. I took a sample in a...

    Water in airlock turned brown!

OK, I'm going to degas again and add a bit of k-meta tonight. How much k-meta should I add? How long should I wait until bottling after this?

    Water in airlock turned brown!

I racked from the primary to secondary per the instructions. Looking at the crud closer I believe it to be sediment. I thought the airlock had equalized but I just checked it again and it appears that it is still moving a bit. Could fermentation have started back up after i added the...

    Water in airlock turned brown!

All, I've got a Winexpert's Island Mist kit that is awaiting bottling. I set the carboy away in a closet and for the last couple of weeks and have been waiting patiently for this time to come. I just checked on it for the first time since I put it away and noticed that the water in the...

    Howdy from Minneapolis, MN

Thanks all! I think I'll skip the concentrates and go right to the fruit! I'm impressed with this group and the great responses! I've been doing some searching and have found a vineyard that offers a pick your own for home winemakers. It looks like they have some frontenac grapes which...

    Howdy from Minneapolis, MN

Hello all. I just started my first kit wine and want to try something else. I'm looking to start a small batch of frozen concentrate wine as the next step. I was going to try Terry Garey's simple apple concentrate recipe from her book 'The Joy of Home Winemaking' but I was going to sub...
