    I made this kit three years ago, you will have a VERY good, no,EXCELLENTwine given time. Have you checked the calibration on your hydrometer to insure you are getting accurate measurments? Your plan for Sunday will work fine.

    Rhubarb wine ?

    Welcome Big Bear, good info on rhubarb wine in this post: http://forum.finevinewines.com//forum_posts.asp?TID=3309&KW=Rhubarb&PN=1 It can make a pretty good wine, I believe Pelican has done a few variations on it also.

    RJ Spagnols OB Mango Mint Chenin Blanc

    My wife made this, bottled about two weeks ago. The taste I had at the time it was very good! Full Mango Fruit flavor and followed with a fresh mint aftertaste.You likemint julips, I believe you would be happy with this one.

    A good Pinot noir is a treat indeed. Ive made a couple of these Renaissance kits, and I am very impressed with the quality of wine made from them, hopefully your wife will be well pleased with it as well.

    You are coming to the end of the fermentation, the biggest benefit of racking to glass will be limiting the exposure to oxygen.

    Way to go! Kind of odd that they wouldn't attempt to make the best that can be made from the varieties available. I would sure think yours would better represent what the grapes can and cannot do. Good luck with them!

    Rats, and other observation from a newbie

    Same here as far as using more fruit per gal,and I also steam juice mine.I would set aside some of those higher % wines and try them again in a couple of years. At that ABV level, it will take some aging to balance out.They may still be a little thin bodied due to low amount of fruit, but...
