    I've had this happen with two bottles opened a day apart (Not from this kit). We opened one bottle and loved it, opened another bottle the next day and it was horrible, it tasted like a different wine altogether.

    Thanks, I picked up one of these kits last month when Paklab was at Costco. I think I'll add the raisins, bananas and oak like I did to the Merlot. It turned out to be quite drinkable after a year of aging.

    WineXpert 2010 Limited Edition Kits

    I am sitting here drinking a glass of the last of the three red LE's they did last year. I just bottled it today. I can say without a doubt that it is good. I'm sure that it will be even better in a couple of years. I may just do all three this year too. Cheers.

    Generally speaking, I do it just the way the instructions say and it works out great. The most important thing is don't rush. Give the wine time to age and it will make a world of difference, even on the inexpensive kits.

    The primary bucket that came with my kit is much bigger than the 23 litres that a kit usually makes. The 23L mark is just over half a bucket. As I recall this kit didn't boil much but that of course can change with temperature, yeast, etc. If it's that close you might want to look into...

    Vineco Legacy Primo Rosso

    It's still in the primary, but so far it looks good. Funny how they suggest you leave it in the primary for 10 days rather than the usual 5-7 days for most kits.
