    An experiment in cold-soak maceration..

In the summer of 2012 I got 70lbs of blueberries, so I did a little experiment. I know that some wines are made using a cold-saok maceration to extract more color and flavor from the skins (as I understand it ) So I made two identical batches of blueberry wine, with the exception that one...

    Fermentation in oil?!?!

No sure if this should be in the general chat section or what... So, this summer we had an abundance of hot pepper from the garden, so after a ton of salsa, 3 hot pepper wines and still having left over peppers I came upon a new idea....Infusing olive oil with various peppers. So we bought a...

Stabilizing - Sorbate / Kmeta.. both?!?

I have noticed in recipes here, that at the end of fermentation a lot of them say to add kmeta AND sorbate. In talking with my local supplier, I was told that is overkill, and you only need to use one or the other. what is the consensus?? On a different/related note....I think my concord/grape...

    Cantaloupe Wine

I started a cantaloupe wine last night but haven't added yeast yet. I remember a freind saying how they made a cantaloupe wine but they were very disappointed in the results. I think they said it was kinda ..thin, I guess would be the best way to describe it. Which got me thinking as I looked at...

Anyone else get results on their Carrot wine?

I started a carrot wine Feb of '09 and bottled it about 4 months ago. We cracked open one last night and I was VERY surprised. I taste-tested a little then asked a couple of other people to take a sip. I asked them what they thought it tasted like. Both agreed with the same thing I thought of...

    Score!!

Sitting around after all the holiday festivities last night I was checking craigslist for wine bottles when I came across a wine cooler for $20 that had been listed on the 23rd. Knowing that good deals evaporate on CL faster than free fruit for winemaking...I thought I'd give him a call...

    Wine Diamonds...how do you..

Get them to form?? I did some research and found that these are indicators of wines that have NOT been cold stabilized, and grapes that have increased 'hang time' before they were picked. I know that here in America people are not accustomed to seeing them, but in Europe they are indicators of a...

    What the heck is that?!?

Last fall we made some wine out of concord grapes from our back yard. Once the wine was done and cleared we added a tiny bit of raspberry liquor and some vanilla for flavor. After a couple more weeks we bottled. Everything was crystal clear. We have drank 4 bottles and have about 5 left. I...
