    Tasteless wine

    I have made wine of several sorts of fruits, pears, mango, peaches. All have been drinkable, but they never taste like the fruit that have been used. The tast is awesome during early ferment, but it disappears as the ferment progresses. What can I do to get the wine taste like the used fruit?

    I have a little to much headspace in my corboy, I think. Is it OK to flush the headspace with co2 and let it sit like that during long time aging?

    Bought myself a Nonne Noir Cabernet Sauvignon kit. Know nothing about this kit. What can I do to make it taste the best possible? Less water? Oak chips? I also have 500 ml of consentrated grape juice. Any ideas?
