I’ve been making wine from kits for a few years, and going to try my own grapes this year for the first time. My vines’ leaves are turning red/brown. What is happening?! Help!

Making 6 gallons of Chardonnay in a 6 gal fermenter. Should I have more room than this?!

I'm making a 6 gallon kit (2 gals juice/4 gals water) and mistakenly added 5 gallons of water! After 9 days of fermentation, it's at .996 Sg, but doesn't taste right. Any ideas how to fix it? Thx!
