WineXpert Private Reserve Yakima Pinot Gris

Made 3 of these kits last year, one is in bulk age now. Made them all without any tweaks and loved the end result. Now I am curious if the recommended tweaks the senior members suggested would improve it. Please keep us updated if you decide to tweak the kit.

    Totally stupid question....

Another suggestion, I simply take a razor knife and make 6 or more slits in the thin part of the cap under the lip. This allows it to be easily removed and snapped back on. Which after emptying the bag allows for easily rinsing the bag to get all residual juice and tannins into the must.

    Wine Logs

    Pectin haze?

The typical answer is to give it time. But it seems you are running out of time to meet your December party. While not a cheap solution you may want to borrow or purchase a filtration system. I use a Buon Vista Minijet (around $200) with a #2 pad for polishing. A #1 coarse pad may get you past...

    Kieselsol & Chitosan

At 5 weeks into a 4 week Island Mist kit which wasn't clearing I went through a second round of kieselsol and chitosan. 24 hours after adding the kieselsol I noticed substantial clearing. But being a fanatic for following directions I added the chitosan anyway. It's now been cloudy for 48 hours...
