    Ehh, I can't remember what the PH levels were. Always heard it's easiest to just add 32ozs of lemon juice up front and then the rest at the end of fermentation so that's what I was trying for. I only have crappy ph test strips. Been meaning to get an actual electronic one.

    I've heard from a few people in this group that step feeding is the way to go and adding too much sugar right off the bat can stress out the yeast and stall fermentation or never even start. 🤷‍♂️

    So I ended up bottling the Skeeter pee! It cleared up no problem, not nearly as yellow as I thought it'd be, it's almost clear. Looks and taste like white wine.     48 hours and no fermentation!

    It seems as though both buckets have stopped well below the alcohol content that the yeast I'm using will yield. Dumped in 2 teaspoons of nutrients 48hours ago in each and still reading same SG on each. One at 10%abv and one at 12% abv estimated. Should I even bottle these? Or maybe just start over?
