I didn't RTFM and now the batch is a lost cause.

Am I reading correctly that you added the 3 gallons of water after you pitched the yeast? If so how long after fermentation started?

    What's in your glass tonight?

Just did a little reading and it looks like the winemaker named vineyards that make the wines he is most proud of after his daughters. There is a Hilary, Chelsea, & Kathrine (I don’t see Sarah listed anymore, maybe she got disowned!)

    What's new in your cellar?

Your post about it in “what’s in your glass tonight” Is what put me on to it. All I can say is thank you because it is an amazing wine! Thank you for your kind wishes!

Homemade vs. Commercial and what I am doing to close the gap

I was always curious how disgorging works on a commercial scale

    What's new in your cellar?

The first case of our budding wine collection. The plan is to have a bottle on our wedding day (Saturday) and then have the rest on random anniversaries over the next 20 years or so!

Homemade vs. Commercial and what I am doing to close the gap

I think it’s a great idea! This past crush, I sorted right off the chute and got a similar amount of stems out of 300lbs of grapes. Although its probably not as feasible for the quantities you're doing, here is my setup... My wife stands at the top (where I am in the pic) and sorts the grapes...

    Let's get all caught up.

That is an awesome story! I wish I had the space for a setup like that.

    What's in your glass tonight?

So tonight we did a blind tasting to pick between two Napa Cabs for our wedding. My plan was to get a case, have one bottle on the wedding night and keep the rest to to have over the next 20 years or so. My dad has always been a Joe Phelps guy so that is kinda what I have known forever. I...

2020 Fall Grape Season Coming Up

You are going to love the bladder press! (does this mean our barrels are in?!?!?)

Last year's mistakes, this year's wisdom (maybe)

Get on YouTube and learn to use that hydrometer! It may be the most important tool in winemaking, especially when talking about adding nutrients in different phases of the ferment. I personally add half a dose of Fermaid K at the beginning of the fermentation and the other half at aprox 1/3 of...

    Replicating a 100 point wine...this season’s plan

The funny thing is, I haven’t made wine in years. I lost the hobby a while ago due to being overwhelmed with work. I always said when I get back into it I will do one quality barrel a year instead of a bunch random kits. Reading through this thread is what lit the spark. I never planned on...

Cab with merlot and cab franc blend advice

Much like the others have said, I’d field blend. I feel like managing 2gal of Merlot and 2gal of CF would be more work than it’s worth.

2020 Fall Grape Season Coming Up

It definitely was a long day but when you look at what those West Coast guys are doing.... ill keep my 6hrs and 300lbs of grapes!
