    We plan to crush/destem our small lot of Chard before pressing, but do plan on a gentle pressing vs trying to extract every drop of juice. We understand the last squeeze will impart an unfavorable astringent taste.

    Yes, we take it all in with a grain of salt. Mostly we watch videos from Vinmetrica showing us how to use their analysis equipment and from others learning how to properly sanitize equipment, etc. There are many differences of opinions on winemaking.. that’s for sure.
