Opportunity to Go Commercial - in Italy ?

This reminds of a little town my in-laws are from called Monsanto in Portugal. It’s in the middle of the country, about an hour north of Lisbon. Back in the day it had a thriving tannery industry but that’s long since closed. All the remaining residents are quite old and as they die off...

12 lbs of fresh cab grapes

Thanks, that’s the direction I was leaning. Would it make any sense to crush them all, treat with any enzymes first, add and metabisulfites before adding them to the kit juice? Or just crush and toss it all in as is? Thanks!

12 lbs of fresh cab grapes

Thanks for the responses. I had a feeling that this was probably going to be the case. All this said, what’s the recommendation for using them? I have a WineXpert Lodi 11 cab kit ready to go. Guess I’ll save the skin kit it came with for something else. Question is, should I just add the...

12 lbs of fresh cab grapes

Hello all! I’ve harvested around 12 pounds of cab grapes from 4 vines I planted around 6 years ago. I was originally planning on tossing them as a substitute for the grape skin pack into a cab wine kit, but I’ve harvested more than I expected which makes me wonder if I have enough to actually...

When you back sweeten do you add add the sugar directly or make a simple syrup?

WineXpert Extended Maceration WineXpert Lodi Ranch11 Cab Kit

Don’t want to add the skin pack as I’m trying to see how my own home grown grapes added as a substitute change the wine’s flavor profile. As of last weekend my grapes have a brix reading of about 20. Figure by the first week or so of next month they’ll be in the 25 range, ready to harvest...

WineXpert Extended Maceration WineXpert Lodi Ranch11 Cab Kit

Update on my EM for the Lodi kit. It's been 2 weeks since I racked the wine out of the big mouth bubbler and into a carboy. I added the sorbate that came with the kit, the oak cubes, and decided that I'd splurge and get an All in One Wine Pump to facilitate this process. Was surprised how...

    My 2nd Go at Winemaking...

Isn’t blending typically done with finished wine ready for bottling? Just asking, I’m not really sure myself. I went to a “blending party” recently at a winery in Paso Robles where we were given three bottles of finished wine in the bottle. We could blend them in and ratios we wanted. The...

    Original Skeeter Pee Recipe

I’m going to chime in on this thread about how to up the lemony taste. Forgive me is this has been covered already, I haven’t read all 11 pages. My wife and I went to Italy last Fall and visited the Limoncello factory. They have a great walk around of the entire process starting with the...

Other Extended Maceration Eclipse Lodi 11 Cab

I’m 7 weeks into my EM on the Lodi 11 cab kit. So far so good. I’ll rack it in another week. Of note so far is the clarity of the wine. I don’t plan on using any of the clarifiers that came with the kit, nor the sorbate as others have noted.

    What’s your longest EM?

I’d be willing to try this too. My EM is five weeks in now, I’m out of town for two more weeks, was planning on racking it a week after that, now wondering. I tried some this past weekend, and apart from being a little fizzy, it was remarkably clear and had some good body.

WineXpert Extended Maceration WineXpert Lodi Ranch11 Cab Kit

Hi George I did not remove the skins. I dumped whatever had settled to the bottom of the bucket, which was some seeds and a few skins but everything that stayed in the bag and still free floating went into the bubbler where it’s been sitting now since June 22. The prior two weeks was all in...

WineXpert Extended Maceration WineXpert Lodi Ranch11 Cab Kit

Hey all, So it's been about 34 days now into EM. Primary fermentation was over after about two weeks in at which point I racked it out of the bucket, reserved the skins and put it all into a big mouth bubbler, put it under airlock and have more less left it alone since. I used a small metal...

WinExpert bentonite dissolving hints / tricks

Re: skins, My kit didn’t come with the bag to put the skins in. I wound up using a similar type bag my wife had laying around, but I couldn’t close it correctly and when I looked the bucket the following morning it had opened and most of the skins were free floating. I decided to just leave...

Leaving town before primary fermentation over

Thanks again. I racked it into the bubbler and reserved the bag of skins and those I could skim off the top that were free floating into the bubbler as well. Now that that’s done I’m wondering if I should do something to add some volume into the bubbler as there’s a little more surface area...
