    You jumped right in and are doing more than most of us are. I'm a pioneer in my area in that I'm planting many varietals that nobody has ever had here before. I'm the first to plant Blaufrankisch. Which is my experimental grape for my area.

    Yeah, the kit says the concentrate/juice is from Australia. Matter of fact it's a dually labeled Shiraz but I prefer syrah as the name.

    Yep, Make sure you research yeast as well and use whatever will bring the most out of the varietal you use. Yeast is a big deal because it does have a massive impact on the final product.

    How heavy are spirals compared to chips? Easier to over oak? I tried a spiral once but the batch I used it in picked up a infection so don't have experience with flavor impact.

    Keep the chito and kiselsol I use it even in all grape batches to clarify it just works well.

    I don't really pick and choose for all grape wines I let the native yeasts do whatever they do. For kits 99% of the time I use RC-212 and BM4x4
