    The Bread Thread

Still cool in the NE. This warmed up the house and smells wonderful. Repaired my lawn mower carburetor in between proofing the sourdough.

    Yeast Rehydration is good stuff

I use Fermax in my fermenting bucket. Do you happen to know the difference between Fermax and GoFerm?

    Yeast Rehydration is good stuff

5-6 Tbls. sugar in addition to Go Ferm? I’ve been using 1-2 tsp sugar with Go Ferm to get it going. Let sit for 20 minutes. Then add 1/3 volume of must or juice let sit for another 20 minutes. Depending on time restraints I may add another 1/3 volume of juice or must and let sit for another 20...

    DangerDave's Dragon Blood Wine

I’ve only used frozen berries for my DB. By the time fermentation is finished, there isn’t much fruit left. The bags are very soft and it’s easy to hand squeeze everything out unlike grape skins in a FWK.

Finer Wine Kit Finer Wine Kits

My thoughts exactly. I looked to see what I paid on the 40% offer compared to free shipping and it’s not even close. The kit prices are extremely high.

    Hi from Iowa!

I see blueberries mentioned a lot on this forum. I am so tempted to make a DB with 100% blueberries. What should I expect. All my other DB mixed berry batches had a very strong strawberry profile even though there were cherries blueberries sour cherries and strawberries in the frozen bags. So...

    Floaties

I have three carboys of Malbec that was made the end of September, racked the end of December and now it’s time for another Kmeta dose. When I pulled the bung I noticed some small floaties. Not a big deal I’ve seen these in other batches. I soaked a piece of paper towel in kmeta and scooped...

    K-Meta vs Campden Tablets

Never used the tablets. I’m guessing they are more expensive and there is the additional step of crushing the tablet. Kmeta powder is a no brainer for me.

    Back sweetening

After fermentation is complete, is it necessary to back sweeten at first racking or can that take place one to three months down the road.

Purchasing distilled water is also an option for your wine. I used distilled exclusively when mixing SrarSan.

Don’t know where people get these ideas. I wouldn’t even put it in the wine room.

How is this for off the wall advice. Just for kicks I googled is EC 1118 a nutrient hog. Here’s what came up. Nutrients are very important. Common household food such as wheat germ, cereal and tomato paste can be used. Non food items such as miracle grow fertilizer and Epsom salts in very...

    Finer Wine Kit Carbon addition

After looking at my notes, most of my whites have been bottled before the one year mark. Mostly because my inventory was low. Now that I have more wine, I have more patience. Having said that I will bottle my Viognier tomorrow that I made last May. Probably won’t wait a year in the future. It...

    Finer Wine Kit Carbon addition

Do you ever let your white wines bulk for 12 months? I noticed in your descriptions you mentioned bottling the wine in 6 months
