    Oh man, memories. One of my favorites as a kid. I had this insane antipathy to onions for some reason. My mom sucker punched me by using french-fried/dried onions in her divan, and I'd eat "whatever those things are" by the bucketful. Looks wonderful!

    OK, perfect, many thanks, greenenvy22. My vessel is 18 D x 21 H, so pretty close to 1:1 aspect ratio (it's a Spike Brewing Co. 20 gallon vessel, actually). I better understand now on managing secondary headspace, thanks there as well. Paul
