    That's not fully accurate, it's as tolerant as Riesling is. Research shows that's cab franc can go to -40 and live without significant damage.

    You should ideally get full crop year 3. Just saying. Another cold Hardy example is Cabernet franc, it's so cold tolerant it will grow in snow.

    Merlot, Pinot, and Sav Blanc are all upright growing vines VSP is the best for productivity. I have my opinion on this based on personal experience and the fact that the majority of local wineries use it.

    I would recommend VSP trellis as all of those are upright growing, i would also like to know what rootstock you are on, As european vines have to be grafted unless you are in sand or you have a high probability of phylloxera

    Wait as the other guy said for a better tasting wine, You could drink it after a month or 2 but it wont taste as good.

    Everything i have read states that 40 years and older is considered old vine. And that it is pretty regulated in california that you cant plant vines and literally call them old vine within a few years. As to that old zinfandel, yeah, thats not too old my family had vines planted in the 1840's...

    Personally I would say no, That they are at this point pretty much dyed whether you rinse or not. I think you would likely get some pink coloration.

    I love old world wines way more than new world, that's my style so I spend time researching and trying to emulate it. It's the history of it.

    Use campden tabs prior to fermentation add one per gallon and then wait 24 hours. Loosely cover it during that period go let gas escape but not let anything in. Then add your yeast. That will help with infections. Also make sure any containers you use are clean, I recommend Star San.

    You are not too far from me, but you are in a much warmer area. I put my Alicante Bouschet onto 101-14 for some control as it is well known to overcrop.

    Nice list, although generally unless you have Sandy soil own root vinifera is strongly discouraged. Did your Grenache on 101-14 seem sluggish first year compared to all your other vines? I noticed my grapes on 101-14 are much slower.

    I use distilled in beer brewing as well when I brew for friends and family. I don't Intend to sound like a know it all. I'm a bit course I guess.

To my uncle, to a italian guy around here who has made wine for 25 years told me to use distilled. I have never had spring water recommended to me ever. So that's where I got it. If...

    Odd smell after secondary -- multiple batches

    Distilled is recommended cause grape juice has enough minerals so that distilled won't harm you. Bit distilled is guaranteed not to have anything that can cause off flavors.
