    Perhaps worth feeding and stopping the fermentation of a California Chardonnay? Could replicate the sweetness. Playing around with a yeast that can bring out the oak profile fully without losing the fruit characteristics would help too! Too bad no Semillon to balance it out.

    @DIYer Has your Whisky Barrel come in yet? Ours came to our store about a month ago, and even as a first-tier WE supplier, we were only able to secure 20 cases. Maybe worth checking that your store actually secured their cases.

    WineXpert Bentonite, higher than usual wine loss

    In future, use 1/2 of the bentonite (if any at all). They increased the amount of bentonite in the pack, as well as the thickness seems to create more sediment. We produce in bulk and we found that lost the least amount of wine.
