    Advice on MLF for first batches of wine. HELP!

    MLF is not recommended and shouldn’t be performed on kits, and won’t have the desired effects. Purportedly, kits are acid balanced using malic acid, and MLB only works on the natural acid in grapes, not the stuff we add. Your kit wines will improve and become more rounded with age.

    Thinking about building a carboy rack

    Yeah, the WMT site has my account jacked up, can’t log on, so I’m ghosting for a bit til it’s resolved. While it is secured to the wall, all of the weight is on the floor. It was loaded like that, 14 carboys for two years. Recently, I’ve been converting the top 7 spaces to bottle storage.

    I love CT, it’s a great tool. @ibglowin turned me on to it, took a while to get all the wine in there, but it was worth it. I’ve only found a couple bottles that weren’t already set up in there, always seem to be able to find the one I’m looking for. CT tells me where in the cellar the wine is...

    Thinking about building a carboy rack

    The bottom of this rack holds 14 carboys very effectively, and has enough room above to take samples and add sulfite, etc. Tilting the top of the carboy out a few inches allows a racking cane to slide in so I can rack without moving the carboys.

    We had two couples over Friday night to visit, served fruits, veggies, artisan cheeses, crackers, prosciutto, etc., pretty large array of snacking stuff, and wine.     Juice buckets and PH?

    Glad you made the adjustments successfully. Making them prior to fermentation is helpful integrating the acid into the wine. Hopefully, once AF and MLF are complete, you’ll be sitting in the 3.6’s and only your taste buds needed for final mods.

    I’m pretty solid on preservation, 31 bottles to start with, and still have 30 left. I’ve got plenty to keep me happy while the young stuff grows up.
