Which Stags Leap Instructions to Use

Mine has a great deal of head space too. The instructions say not to top it up because it will be fine for the amount of time prior to bottling (instructions time) however I sure am nervous about it.... Maybe someone who has made these prior will be able to shed some light on the issue? Great...

    Sweet Tea Wine

Did you add anything to the must such as tannin, acid blend, etc. I have seen varying opinions on the research I did. Thanks!

    Sweet Tea Wine

Growing up we always had home grown spearmint tea. My mother still makes it every year. I asked if she could make me some concentrate out of this and she said she could. I am going a little stronger on the tea since #1 it's good, and #2 I'm afraid the taste would be weak if I don't up it? I know...

Which Stags Leap Instructions to Use

One of my kits say to put in primary for 5-7 days and when SG gets to 1.010 or less rack into secondary fermentor to finish until fermentation is complete. My other kit says to leave it in the primary for 14 days then rack when dry. Which one should I go by? Thanks!

WineXpert Island Mist Hard Pink Lemonade

Well I did it! I received my kit and got it in the fermenter last night. I took the SG up to 1.080 since I like a little more bite...:r Really excited about this batch since my wife doesn't like the dry reds with tannin and oak like I do. This will be more like liquid happiness for...

    Stags Leap Merlot

I am slightly confused. Wow.....was trying to keep that a secret...haha. Seriously though, I was reading the instructions of my SLM before starting...:br and during my read after the degassing stage it said not to worry about topping off the carboy because it would only be in there, don't qoute...

WineXpert Island Mist Hard Pink Lemonade

If you don't mind me asking, what did you end up using in the primary to bring your SG up? I like stronger wines as well.

    Dry Red Ideas

I am new to wine making and started with some cheaper kits and some fruit bases. I just can't find the taste I prefer. I love a nice dry Merlot with an oak tannin bite. I am not experienced enough for figuring out what I want. Do you have suggestions for a good quality Merlot kit for a nice dry...

What is it and how do you know?

As all if you know I am new to this wine making thing. I can tell you that I love dry red wine. Merlot and Pinot Noir are my favorite so far. When tasting the oaked Merlot I can taste the oak and grape. I can taste the slight bitterness tart sensation. Is that tanin? If so, how can I make my...
